White asparagus mousse


I make this mousse with white asparagus as they are very appreciated in Spain. If you can’t find them, you always can use green ones. You only have to cbanch them before and use the same quantity like in the recipe.

Ingredients (8 portions)

300 g white asparagus, 4 eggs, 1 can evaporated milk, salt, black pepper, extra virgin olive oil, green asparagus, mayonnaise


Preheat oven to 180C. Strain the asparagus and leave them to drain. In a bowl, beat the eggs. Add the asparagus and mix roughly with a blender. Add the evaporated milk to the mixture and blend until smooth. Season with salt and black pepper.

Pour the mixture in a mould. Put into the oven for 20 minutes in a bain- marie. When the cake is baked, take it out from the mould and leave it to cool.

Wash the green asparagus and cut them in half. In a frying-pan pour a dash of olive oil and stir-fry the tips. Sprinkle on a few flakes of sea salt. Spread the mayonnaise on top and lay out the fried tips of the green asparagus.
