📢 Many of you replied with the right answer, yes, horchata. A few didn´t know about this drink or had heard about it but never tried. However, even Starbucks had a frappuccino called horchata (although they used almonds instead of tiger nuts... meh...😏). And the American band Vampire Weekend had a song called Horchata! 🎶⠀

🍹Horchata is a Spanish summer drink. Originally from Valencia area, you can find it now almost everywhere in the country. It is made with tiger nuts, what we call chufas. Although tiger nuts look like nuts, it´s a tuber so it´s alright for anyone with nuts allergies. In some South American countries, you can find horchata but it´s made with rice.⠀

😋 It´s a dairy-free and non-alcoholic drink, refreshing, with an earthy taste, very particular. It´s not a very common ingredient but I buy them at Al-Amin in Cambridge and probably you can find them as well in the market.⠀

The recipe is very simple. ⠀
For 2 glasses:⠀
- 250 g tiger nuts⠀
- 500 ml water⠀
- 1 tablespoon of sugar⠀
- Cinnamon⠀
⠀
1️⃣ Soak the tiger nuts for 24 hours.⠀
2️⃣ Strain them and put them in a blender or food processor.⠀
3️⃣ Add half of the water and blend until you get a thick paste.⠀
4️⃣ Add the rest of the water and blend again. Add the sugar and blend.⠀
6️⃣In a strainer, put a piece of muslin cloth and pour some of the mixture. Use a spoon to filter the water. ⠀
7️⃣Repeat the process until you filter all the liquid.⠀
8️⃣Serve cold with some ice and sprinkle some cinnamon on top.⠀

We had a couple of weeks break but we are back with more recipes!💪🏼Tradicional and classic dishes that are delicious but old fashion. 💚 Yes, those your granny cooked and you loved it but don't make at home any more. 

🔪🥔🧄After several Saturdays cooking sweet recipes, we made a savoury dish today. Very simple, super tradicional and classic, and one of my favourite meals when I was a child (and even now!).

I love savoury and sweet mix. 💚 ⠀

Maybe because I´m not a dessert person, I prefer to add some sweetness to my savoury recipes. In summer, that´s a great idea as there are so many delicious and colourful fruits to add to salads, for example, or to make a starter or a tapa. ⠀

INGREDIENTS⠀
 ⠀
6 apricots⠀
120 g Iberico ham or serrano ham⠀
120 g cottage cheese⠀
12 pieces sourdough bread⠀
Cress⠀
Salt⠀
Black pepper⠀
⠀
INSTRUCTIONS⠀
 ⠀
1. Cut the apricots in halves and take the stone out. You can add a bit of brown sugar to each half of the apricot. I didn’t do it as mine were ripe and sweet and they didn’t need any extra sweetness.⠀
⠀
2. If you are roasting the apricots in the barbecue, use the edges of the grill to roast them. If you are not doing it in the grill, you can use a cast iron pan in high heat on the stove.⠀
⠀
3. Grill the apricots, cut side down, for about a minute until you see the marks of the grill.⠀
⠀
4. Slice the sourdough bread and cut each slice in half. Toast it in the barbecue or in a toaster.⠀
⠀
5. Put around 10 g of Iberico ham (if you don’t have Iberico, a good serrano ham works perfectly too) over the warm bread. The heat will melt the ham and brings all the flavours to the bread. On top, set a halve of grilled apricot. On the cut side up, put a dollop of cottage cheese. Dress it with a pinch of salt, black pepper, and some cress.⠀

We are enjoying these sunny days that don't want to think about the weather forecast for the rest of the week.

More sunny and warm days will come as it's just the 1st of June! So I have this cocktail recipe that I made yesterday and it's a great idea for summer: fruity, light, slightly sweet and with this vibrant colour.

Furthermore, sometimes the watermelons are too big even if we buy just a portion so it's a different way to use it. I did that this bank holiday weekend and I will post more recipes with watermelon, from smoothies to salads. Keep an eye! 👀

🍹🍉 WATERMELON with LUXARDO LIQUOR and PISCO

For 2 cocktails

400 ml watermelon juice
50 ml luxardo
25 ml pisco 
Few drops of lemon juice
Ground black pepper
Cherry bitter

1️⃣ Cut 2 large slices of watermelon, remove the skin and any white rind. Also, take off any seeds and chop the flesh. 

2️⃣ Blend the pulp in a juice or hand blender. The fruit is very juicy so you don't need to add water or any other liquid. Add a few drops of lemon juice and a pinch if ground black pepper and stir.

3️⃣ Add the luxardo liquor and the pisco to the juice and stir. 

4️⃣ In a glass, put some ice and pour the mixture cocktail and a few drops of cherry bitter.

5️⃣ Decorate with a piece of wstermelon and lemon. If you have some mint, it will give a nice fragrant touch.
