The classic banana bread and banana biscuits with oat and chocolate chips
During this strange time in isolation because of the COVID-19 crisis, I am doing something strange for me too, baking. I´m not a very sweet tooth person, to be honest, so I don´t bake or make desserts very often. However, I had a number of bananas from the vegetables and fruit box I order online every week (check Cambridge Fruit Co, they are doing an AMAZING job delivering fresh fruit, and delivering the donations to NHS and the Cambridge charity The Red Hen Project). Some of them were almost too ripe so decided to make the most of it.
Banana and oat biscuits with chocolate
Although the picture is not very good, the biscuits were delicious!
It´s a very simple recipe. For a small batch, around 9 biscuits, I used:

a large ripe banana

75 g oat
-
a small handful of chocolate chips
Method

Heat the oven to 180C

Smashed the banana, add the oat and mix very well until both ingredients are well consolidated and you get a consistent texture, no very runny. Then add the chocolate chips and mix again.

In a baking tray lined with parchment paper, put dollops of the mixture with a tablespoon. They don´t rise so don´t need to be concerned about how close they are to each other.

Bake them for 20 minutes (but check your oven, as they can be done earlier).

Take them out from the oven and let it cool down in a rack.
Banana bread recipe

Banana bread is a classic cake when you think of what to do with bananas, right? But, as I said, my baking repertoire is very classic, let´s say 🙂
Anyway, the result was very good and I´ve been enjoying a piece of cake every day for breakfast. And now, I have another couple of bananas ready for the next one!
What you need:
140 g self-rising flour
140 softened butter (and a bit more to brush the baking tin)
140 g sugar
2 large eggs (at room temperature)
2 ripe bananas (smashed)
1 teaspoon of baking powder
Method

Heat the oven to 180C

Butter a loaf tin and line the bottom and sides with parchment paper

In a bowl mix the sugar en butter until you have a smooth texture

Add the beaten eggs with a pinch of the flour reserved and mix

Add the rest of the flour and the baking powder and mix again.

Add the bananas, mix again and put into the tin

Bake for around 30/40 minutes, depends on the oven.
