Spanish Christmas dessert

The traditional Spanish sweets we have at Christmas time  are “turrón“, “polvorones”  and “mazapanes“. Generally, we have these confections with a cup of coffee after the Christmas Eve’s dinner of the Christmas Day’s lunch, while the family chat and enjoy themselves.

In my family, we have a proper dessert before these sweets. Although we normally make it with winter fruits like pineapple, prunes or oranges. However, this year we are planning to do something different taking advantage of a delicious fruit, not very common in my area, that we kept frozen: raspberries. In my region, which is really flat, is rather difficult to find any kind of berries unless you go to a mountain near to my family town. Even so, it is a dry area so it is difficult to bump into this fruit. When you get them, it is an enormous pleasure because of the flavour and aroma.

We were lucky last summer and found a few raspberries. We enjoyed them and due to their amazing flavour decided to freeze some to use them in winter. And now, it is time to make the most of them! Here we are: small glass of raspberries mousse with cheese cream and chocolate curls.

 

INGREDIENTS

(For 8 people)

240 grams all-butter biscuits

80 grams butter

175 grams sugar

2 tsp lemon juice

225 grams soft cheese

225 grams whipped cream

150 grams raspberries

Chocolate curls

 

STEP-BY-STEP

1.- Smash the all-butter biscuits in a bowl.

2.- Blend the butter in the microwave. Mix it with the smashed biscuits and pour a spoonful of lemon juice. Stir the mixture until getting a smooth dough.

3.- In a small glass, put the biscuit dough at the bottom and press it.

4.- For the cheese cream, in a bowl, mix 150 grams of sugar, a tablespoon of lemon juice and the soft cheese. Blend it with a hand blender. When all the ingredients are well mixed, pour the whipped cream slowly and stir the mixture.

5.- When you get a well-blended cream, add the raspberries and mix them with the cheese cream.

6.- Use a pastry bag to fill the small glasses with the cream and put them in the fridge until you serve them.

7.- You may decorate them with a mint sheet and some chocolate curls.
