
Pork loin in black garlic and pine nuts sauce
Ingredients (For 4 people)
8 pork loin steaks
4 cloves of black garlic
100 gr. pine nuts
250 ml. meat stock
Flour
Salt
Black pepper
Extra Virgin Olive oil
STEP BY STEP
Season the steaks with salt and black pepper. Coat them with flour. In a deep pan, pour Extra Virgin Olive oil in a high heat and fry the steaks (just to seal the meat). When the steaks become golden take them out and set aside. Turn the heat down and, in the same olive oil, fry the pine nuts (be careful do not burn the pine nuts as they become brown quickly).
In the same deep pan, add a bit of flour in the warm olive oil and pine nuts and stir for a while until the flour is cooked. Then set the pork loin steaks and pour the meat stock. Slice the black garlic and add to the stock. Stir carefully until it boils. Turn down the heat and keep it boiling for 10 minutes.
