Peas, poached egg and crispy Serrano ham

Peas, poached egg and crispy Serrano ham, a warm recipe for a winter night.

Try this recipe of ¡Qué Rico! Tapas. It is a balanced nourishing dish, easy to cook and tasty. The slight sweetness and softness of the peas contrast with the salty and crispy Serrano ham. The soft yolk of the poached egg spreads its texture and mixes with the peas creating a sort of natural sauce which enhances the juiciness of the dish.

Ingredients (4 people)

750 grs. peas

1 onion

4 eggs

4 slices of Serrano ham

A spoonful of flour

A pinch of salt

A spoonful of white vinegar

Water

 

How to make it.

1.- Pre heat oven to 180C.

2.- Pour water and a pinch of salt in a pan and bring it to boil.

3.- When water begins to boil, add the peas and boil them until just tender.

4.- Take a frying pan and heat a good glug of Extra Virgin Olive Oil on a low heat. Chop the onion and fry it until golden. Add a spoonful of flour and simmer for a couple of minutes.

5.- . Strain the peas through a colander and keep them back into the pan. Pour the onion and blend it with the peas.

6.- In a wide and deep saucepan, pour water and a few drops of white vinegar.

7.- Break and egg in a small bowl.

8.- When water begins to boil, take it off from the heat. With the small bowl, dip the egg slowly and carefully into the saucepan until the egg is floating. Repeat with the rest of the eggs.

9.- Put the saucepan back on a medium heat for 3 minutes.

10.- In a baking paper, spread the slices of Serrano ham and put them into the oven for 2 minutes or until the ham is crispy.

11.- Remove the eggs and dry off using kitchen paper.

12.- Plate the peas up with the poached eggs on top and a slice of crispy Serrano ham.
