Filled courgette with bacon, onion and cheese

This is a delicate tapa that you can customize with the filling you like. Actually, bacon is optional so you can stuff the courgette with other vegetables to cook a vegetarian tapa.

 

Ingredients (for 4 people)

1 large courgette

1/2 onion

1 rasher of smoked bacon

Grated cheese

Tomato sauce

Salt

Extra Virgin Olive Oil

 

Step by step

1.- Preheat the oven to 180ºC

2.- Wash thoroughly the courgette and cut it in wide slices (6-8 cm each roughly). Get rid of the top and the bottom of the courgette.

3.- With a sharp knife, take off the flesh of each courgette slice.

4.- Chop the flesh and keep it.

5.- Chop the onion and the smoked bacon.

6.- In a frying pan, pour a glug of Extra Virgin Olive Oil in a medium heat.

7.- Simmer the courgette flesh, the onion and the bacon and season with a pinch of salt.

8.- Once the mixture is cooked, side apart and cool it down.

9.- Cover a baking sheet with baking paper and lay the courgette pieces.

10.- With a spoon, fill the courgettes with the mixture.

11.- Sprinkle grated cheese on top and put into the oven for 10/15 minutes.

12.- Take out the courgette and plate up.

For the tomato sauce, you can use a can of natural tomato and fry with a pinch of salt, sugar and dill.

 

Platting up

1.- Put a tablespoon of tomato sauce on the bottom of the plate.

2.- Lay the filled courgette on top.
