Dinner party with a Spanish twist


I was catering for Willingham Wine Appreciation Society annual dinner last Saturday at Cambridge Wine Merchants Cherry Hinton Branch in Cambridge.

It was an amazing night, the kitchen busy, cooking and plating up a three-course meal based on Spanish dishes! We enjoyed, had fun and loved the energy a kitchen can concentrate when you are giving your best!

Such a great team I had with Camilla Marshall Lovsey and Anta Mai, with all the support and coordination of Cambridge Wine MerchantsCherry Hinton Branch, in particular, Susie Wareham.

The menu was based on Spanish seasonal products and they chose as a starter between white asparagus mousse with orange sauce or avocado and marinated salmon with mustard and spring onions

As a main, there was a vegetarian option with artichokes from Navarra and broad beans or slow-cooked beef cheek in red wine with potato puree.

As a pudding, poached pears in white wine with fragrant syrup and cardamom cream or mango and chocolate mousse.
