Beetroot soup or my version of borscht
Borscht or Barszcz is a beetroot soup very popular in East Europe. Depending on the country, the recipe has some variations, either for the ingredients or for how to cook it.
The common point is the beetroot, which gives the soup its peculiar and characteristic red colour.
For this recipe, I used onion, potato, beetroot and sour cream. I love the colour and the taste, half-sweet-half-sour.
You can make a vegetarian version or cook with meat; it may be cold or hot, serve it for Christmas or for Easter. There are a number of options and occasions to enjoy it!
