Banana with bacon and cheese

Sweet and savoury dish, perfect for brunch

This is a dish that you can cook as a brunch, for example, as you use the banana as a sweet alternative to a pancake or a crumpet

The ingredients you need are very simple but the combination, always, is a winner.

Ingredients for 2 portions

  • 4 rashers of smoked bacon

  • 50 g of grated cheese (anyone you like but preferably one that melts like cheddar, gruyere, or a mix)

  • 2 ripe bananas

  • Guacamole (optional)

Cut the bacon and fry in a pan until crispy. Remove the oil the bacon released but don´t clean or dry the pan completely as we will fry the bananas in the same pan.

Peel the bananas off. Heat the pan you used to fry the bacon in high heat and fry the bananas. Flip them over to golden each side.

Once they are golden and soft but not mushy, put them in a plate, cut them longwise and open the sides to put the bacon and the grated cheese.

Warm in the oven with the grill option or in the microwave for a couple of minutes until the cheese melts.

I served them with a bit of guacamole I had to give the dish a bit of hot hint. This is optional, but if you would like a bit of hot end to balance the sweet and saltiness of the dish, you can sprinkle some chili flakes or chili sauce.
