Apricot, kumquat and raspberry smoothie
A refreshing citric smoothie, perfect for a sunny day (or cloudy too)
A walk to the market square in Cambridge is always worthy. Today the stalls were full of colours, with summer vegetables and fruits like cherries, peaches or apricots. But a small orange fruit captured my attention. I had heard of kumquat but had never seen it and tasted and they were there, in front of me so I couldn’t resist and bought some.
The kumquat is really interesting. It is a citrus that you can eat with the skin. It is a little bittersweet but not too sharp. I have researched a bit about his fruit, known as well as Chinese orange or little orange and it is really healthy. It contains high levels of vitamin C, folic acid, magnesium and potassium.
My first thought was to use them in a salad but then I remembered a smoothie recipe from a book I bought recently and decided that they would be better for a refreshing summer drink. The recipe was made with apricots and raspberries so I tweaked it a little bit.
For 2 portions:
– 2 apricots
– 1 handful of raspberries
– 2 kumquats
– Honey
– Ice
– Water
I added a bit of honey as the raspberries were a bit sharp.
Blend it until getting a smooth texture. Add more water if you want it a bit runnier. You can replace the water with coconut milk.
