The name of this cold soup means “white garlic” and yes, it is cooked with garlic but that is not the main ingredient. We also use almonds and bread crumbs, seasoned with extra virgin olive oil and vinegar. The result is a fresh soup with a special and particular flavour. A topping made from white grapes provides a contrast to the garlic and the slightly bitter flavour of the almonds. Definitely, a new flavour.
